Alexanders are a vigorous, celery-like herb used since Roman times, with seeds that are peppery, aromatic, and used as a spice, similar to black pepper but with floral/anise notes, and can be used in baking, drinks, or as a general condiment. The plant offers edible leaves, stems, buds, and roots, providing winter greens, while its flowers feed pollinators, and the seeds need cold stratification (winter chilling) to germinate well, often sown late summer or early spring.
